Join integrative dietitian of Naturally Nourished, Ali Miller, as she walks you through a food-as-medicine dining experience prepared and created by chef Monica Pope of Sparrow Bar + Cookshop.

 

The first dinner of the series will focus on being a Locavore. If food is your medicine, it is important to have a potent and sustainable pharmacy (or Farmacy) through support of local farmers, ranchers, and purveyors. Monica will prepare a 4-course menu featuring local producers and heirloom unique varietals of fruits, vegetables, herbs, and proteins.

 

Ali will discuss:
-The anatomy of the garden: a comparison on soil composition to that of gut ecology, playing a vital role in our ability to absorb vitamins/minerals
-The difference of big-Ag organic and sustainable production and the nutritional impact
-Importance of biodiversity in produce/livestock
-The synergistic effects of whole foods: how to identify a whole food
-The role of toxins/additives in our food system
-Grass-fed and pasture-raised proteins vs. conventionally raised (wild vs. farm-raised fish)
-Medications acting as bandaid to “fix” systemic imbalances due to nutritional deficiency
-The role of food as medicine: building/preparing your medicine cabinet
-Where to start? How to become a locavore?
-Traditional foods, traditional preparation techniques, food preservation, making it happen, etc.
